Cream of Broccoli Leek Soup

Ingredients

  • 3 Tbsp Butter or margarine
  • 1/3 tbsp Leeks, white only, chopped
  • 1/3 cup Yellow onion, chopped
  • 1/3 cup Celery, sliced
  • 2 cups Mann's Broccoli Wokly®, chopped
  • 3 Tbsp Flour
  • 1/2 cup Dry white wine
  • 3 cups Chicken broth, low-sodium, may substitute vegetable broth
  • 1 cup Light cream Salt and pepper, and herbs or thyme

Directions

Melt butter in saucepan and sauté leeks, onion, celery and Mann’s Broccoli Wokly® for 5 minutes. Blend in flour. Stir in wine and chicken stock, bring to boil. Reduce and simmer 10 minutes until vegetables are tender. Add light cream and season with salt, pepper and herbs or thyme. Heat to serve. Can be prepared 24 hours in advance.
